I peel 1/2 a large grapefruit , 1 medium size orange and a lemon with a veg peeler to get thin skins, which I trim and slice , put them in a pot with minimum water and simmer until tender. I then cut the fruit up removing pips , pith and segment skins to get small pieces of pure fruit. I drain the tender skins and add the fruit and simmer until cooked. Then I add the Tantalize Make A Jam crystals of sweetner and thickener until the jam is the desired consistensy , I find it keeps in the fridge for well over a month.
